How to cook “Lo Mai Kai” (Glutinous rice with chicken)

Ingredients:
a. Chicken (cut into pieces & marinade overnight with ingredients from g to l)
b. Waxed sausages (as much as you like & slice into medium size - pic)
c. Dried shrimp (soak & washed)
d. Dried black mushrooms (soaked overnight & cut into halves or three)
e. Garlic (chopped into small bits)
f. Ginger; 1-2 inches (sliced thinly)
g. Salt (1/2 tsp)
h. Pepper
i. Thick soya sauce (1 tbsp) 
j. Light soya sauce (2 tsp)
k. Oyster sauce (2-3 tbsp)
l. Sesame oil (1 tsp)
m. Glutinous rice

Method:

1. Soak glutinous rice with water for an hour (use as much as you desire)
2. Wash rice once or twice
3. Add in water enough to cover the rice on par level, not too much or it’d turn really soggy at the end. (you may steam it in a bowl or a tray like I did - pic)
4. Mix in ingredients (from c to l)
5. Arrange the chicken on top - pic. Then steam it for 15-20mins
6. Add on the sliced sausages on top layer & let it steam for another 15mins
7. Serve with your favorite chilli sauce (best with garlic chilli sauce that goes superbly well with chinese dim sum food)
